Zucchini muffins with raisins and nuts

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1 tablespoon vanilla
  • 2 cups, unpeeled shredded zucchini
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1 cup raisins
  • 1/2 cup chopped nuts

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Grease 2 dozen muffin cups.
  2. Stir together the eggs, sugar, oil and vanilla. Mix well, then stir in the zucchini.
  3. Take 1/4 cup of the flour and toss it with the raisins and nuts.
  4. Mix the flour, baking soda, baking powder, salt and cinnamon. Create a hole in the center of the flour mixture, and fill with the zucchini mixture. Stir only enough to moisten. Fold in the raisins and nuts.
  5. Scoop into the prepared muffin cups, filling them 2/3 full. Bake for 20 minutes.
