Zucchini muffins with raisins and nuts
Ingredients
- 2 eggs
- 1 cup sugar
- 1/2 cup oil
- 1 tablespoon vanilla
- 2 cups, unpeeled shredded zucchini
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 1 cup raisins
- 1/2 cup chopped nuts
Directions
- Preheat oven to 350 degrees Fahrenheit. Grease 2 dozen muffin cups.
- Stir together the eggs, sugar, oil and vanilla. Mix well, then stir in the zucchini.
- Take 1/4 cup of the flour and toss it with the raisins and nuts.
- Mix the flour, baking soda, baking powder, salt and cinnamon. Create a hole in the center of the flour mixture, and fill with the zucchini mixture. Stir only enough to moisten. Fold in the raisins and nuts.
- Scoop into the prepared muffin cups, filling them 2/3 full. Bake for 20 minutes.
