Bell Pepper and Black Bean Salsa

Chill this flavorful and vibrantly-colored salsa in the refrigerator for at least one hour prior to serving to allow the flavors to meld together.


  • 1 can of black beans, rinsed and drained
  • 1/2 yellow pepper, diced
  • 1/2 red pepper, diced
  • 3 Roma tomatoes, diced
  • 1/2 red onion, diced
  • 3 garlic cloves, minced
  • 1/2 bunch fresh cilantro, chopped
  • 1 jalapeno, minced
  • Juice of 1 large lime
  • Salt and pepper to taste


  1. Place the black beans, peppers, tomatoes, onion, garlic, cilantro, jalapeno and lime juice into a large bowl. Sprinkle the mixture with a few pinches of salt and pepper, and then gently toss to combine. Serve immediately.
