With its stunning pinkish-red color and intense garlicky and tahini taste, this beet hummus is as enticing in presentation as it is in taste.


  • 3 medium roasted beets, peeled
  • 2 tablespoons tahini
  • 1/4 cup fresh lemon juice
  • 1 clove garlic, chopped
  • 1/4 cup olive oil plus to drizzle
  • Sea salt to taste


  1. Place the beets, tahini, lemon juice, garlic and olive oil into a food processor and process on high until the mixture is smooth. Add a few pinches of salt to taste and then serve drizzled with additional olive oil.
