- 3 medium roasted beets, peeled
- 2 tablespoons tahini
- 1/4 cup fresh lemon juice
- 1 clove garlic, chopped
- 1/4 cup olive oil plus to drizzle
- Sea salt to taste
- Place the beets, tahini, lemon juice, garlic and olive oil into a food processor and process on high until the mixture is smooth. Add a few pinches of salt to taste and then serve drizzled with additional olive oil.
