Beef Fajitas in a Crock Pot

You want have to fry this fajita, it is much healthier cooked in a crock pot.

Ingredients

  • 2 lbs. beef steak
  • 1 onion, chopped
  • 1 green sweet pepper, cut into pieces
  • 1 jalapeño peppers, chopped
  • 1 tbsp. snipped fresh cilantro
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. minced garlic
  • ¼ tsp. salt
  • 1 can stewed tomatoes (8 oz.)
  • 12 flour tortillas
  • 2 tsp. lime juice

Directions

  1. Cut steak into 6 portions.
  2. Combine steak, onion, green sweet pepper, jalapeño peppers, cilantro, chili powder, cumin, coriander, garlic, and salt in crock pot.
  3. Add undrained tomatoes.
  4. Cover; cook on low for 8 to 10 hours.
  5. Set oven to 350°.
  6. To heat tortillas, wrap them in foil and bake for 10 to 15 minutes or until softened.
  7. Remove steak from cooker and shred.
  8. Return steak to cooker.
  9. Stir in lime juice.
