Three bean salad with potatoes and cucumbers.
- 4 small red potatoes, cut into 1-inch pieces
- 1 (15 ounce) can three-bean salad, undrained
- 1/2 cucumber, seeded and chopped
- 1/4 cup chopped red onion
- 1/4 teaspoon salt
- Add the potatoes to a saucepan and cover with water. Boil for 10-15 minutes, or until tender. Drain.
- Combine everything in a large bowl. Allow to stand for 30 minutes before serving.
