Bayou Gumbo in a Crock Pot

Service this Gumbo with french bread.

Ingredients

  • 3 tablespoons flour
  • 3 tablespoons oil
  • 1/2 pound smoked sausage, cut into 1/2-inch slices
  • 2 cups frozen cut okra
  • 1 onion, chopped
  • 1 large green pepper, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon. black pepper
  • 1 can diced tomatoes, undrained
  • 12 ounces frozen shelled deveined cooked medium shrimp, rinsed
  • 1 1/2 cups uncooked regular long-grain white rice
  • 3 cups water

Directions

  1. In small saucepan, combine flour and oil.
  2. Blend well.
  3. Cook, stirring constantly, over medium-high heat for 5 minutes.
  4. Reduce heat to medium.
  5. Cook, stirring constantly, until mixture turns reddish brown.
  6. Place flour-oil mixture in crock pot.
  7. Stir in all remaining ingredients except shrimp, rice and water.
  8. Cover and cook on low setting for 7-9 hours.
  9. When ready to serve, cook rice in water as directed on package.
  10. Meanwhile, add shrimp to gumbo mixture in crock pot.
  11. Blend well.
  12. Cover and cook on low setting for additional 20 minutes.
  13. Serve gumbo over rice.
