Battered catfish filets.
Ingredients
- 2 pounds catfish filets
- 1 teaspoon hot sauce
- salt and pepper to taste
- 3 eggs, beaten
- 1 1/2 cups cornmeal
- cooking oil
Directions
- Rub the hot sauce, salt and pepper into the fish. Let set for 1 hour.
- Cut into bite size pieces and dip into eggs and roll in the cornmeal.
- Fry for 2-3 minutes in deep fat until golden brown. Drain.
