Battered catfish filets.

Ingredients

  • 2 pounds catfish filets
  • 1 teaspoon hot sauce
  • salt and pepper to taste
  • 3 eggs, beaten
  • 1 1/2 cups cornmeal
  • cooking oil

Directions

  1. Rub the hot sauce, salt and pepper into the fish. Let set for 1 hour.
  2. Cut into bite size pieces and dip into eggs and roll in the cornmeal.
  3. Fry for 2-3 minutes in deep fat until golden brown. Drain.
