This soup is a wonderful source of protein, carbohydrates, and fiber.
Ingredients
- 4 cups chicken stock
- 1 cup cooked chicken cut into bite size pieces
- 1 onion, sliced into rings
- 1 stalk celery, chopped
- 1 small parsnip, sliced thin
- 1 cup pearl barley
- 1 small strip Kombu
- 1 tsp. dried basil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Directions
- Combine all ingredients except salt in crock pot.
- Simmer until the barley is cooked, ( 3-4 hours). Season to taste.
