Ingredients

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg
  • 3/4 cup mashed bananas
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped walnuts

Directions

  1. Mix together butter and sugar until well blended.
  2. Add egg, banana and vanilla.
  3. Combine flour, baking powder, salt, baking soda and cinnamon; add to sugar mixture.
  4. Fold in walnuts.
  5. Pour batter into prepared muffin tin.
  6. Bake at 350 degrees for 25 minutes.
