Ingredients

  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1 cup applesauce
  • 3 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cups mashed bananas
  • 3 cups natural bran
  • 1-1/2 cups buttermilk
  • 3 cups flour
  • 3 teaspoons baking powder
  • 3 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup raisins

Directions

  1. Beat sugar, brown sugar, applesauce, eggs, vanilla, bananas, bran and buttermilk; set aside.
  2. Combine flour, baking powder, baking soda and salt.
  3. Blend flour combination into banana mixture.
  4. Fold in raisins.
  5. Pour batter into a greased muffin tin.
  6. Bake at 375 degrees for 15-20 minutes.
