These soft muffins make an excellent breakfast treat.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup shortening, softened
  • 1/2 cup mashed bananas
  • 1/2 cup crushed pineapple with juice
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1-1/2 cups flour
  • 1/8 teaspoon salt

Directions

  1. Combine baking soda, baking powder, flour and salt; set aside.
  2. Cream sugar, shortening, bananas, pineapple and egg.
  3. Blend flour combination into egg mixture.
  4. Pour batter into muffin tin.
  5. Bake at 400 degrees for 15 minutes.
