These soft muffins make an excellent breakfast treat.
Ingredients
- 1/2 cup sugar
- 1/2 cup shortening, softened
- 1/2 cup mashed bananas
- 1/2 cup crushed pineapple with juice
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1-1/2 cups flour
- 1/8 teaspoon salt
Directions
- Combine baking soda, baking powder, flour and salt; set aside.
- Cream sugar, shortening, bananas, pineapple and egg.
- Blend flour combination into egg mixture.
- Pour batter into muffin tin.
- Bake at 400 degrees for 15 minutes.
