Delicious brunch muffins
Ingredients
- 2 cups flour
- 1/2 teaspoon salt
- 1 cup sugar
- 1 1/3 cups mashed bananas (3 medium sized)
- 3 teaspoons baking powder
- 1/2 cup shortening
- 2 eggs
- 1 cup chopped walnuts
Directions
- Preheat oven to 350 degrees Fahrenheit. Grease 2 muffin trays
- Sift the flour, salt and baking powder together.
- Beat the shortening and sugar until fluffy. Mix in the eggs, one at a time. Stir in the bananas. Mix in the flour, midful not to overbeat the batter.
- Fill the prepared muffin cups 2/3 full. Bake for 20 minutes.
