These fun cupcakes will definitely be a crowd pleaser! Can be topped with your choice of frosting.

Ingredients

  • 1/2 cup shortening
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup mashed bananas
  • 1/4 cup buttermilk
  • 2 cups flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Cream shortening, sugar, eggs, vanilla, bananas and buttermilk.
  2. In a separate bowl, combine flour, baking powder, baking soda and salt.
  3. Blend flour combination into banana mixture.
  4. Pour batter into greased muffin tins.
  5. Bake at 350 degrees for 15-20 minutes.
