This easy-to-make coffee cake is ideal for serving as an after-breakfast treat, especially with a hot cup of coffee.

Ingredients

  • 1 cup blueberries
  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup mashed bananas
  • 1/2 cup buttermilk
  • 6 tablespoons butter, softened
  • 1 egg
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Directions

  1. Combine 2 cups flour, 3/4 cup sugar, baking powder, baking soda, salt and 1/2 teaspoon cinnamon; set aside.
  2. Mix together bananas, buttermilk, 6 tablespoons butter and egg; beat well.
  3. Blend flour combination into banana mixture.
  4. Fold in blueberries.
  5. Pour batter into a greased 8x8 baking dish.
  6. Mix together remaining flour, sugar, butter and cinnamon until mixture becomes crumbly; sprinkle over top of cake batter.
  7. Bake at 350 degrees for 25-30 minutes.

I just made this for the first time. Very easy and smells great! It's very yummy!! I just had to share it with my neighbors!! Will definitely make it again.
