These moist muffins are a great comfort food and a perfect late night snack.
Ingredients
- 4 large ripe bananas, mashed
- 1/2 cup white sugar
- 1 slightly beaten large egg
- 1/3 cup melted butter
- 3/4 cup chocolate chips
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1-1/2 cups flour
Directions
- Preheat the oven to 350 degrees and grease a muffin tin with butter or oil.
- In a large bowl, mix the banana, sugar, egg and butter together until blended.
- In a second bowl, whisk the baking soda, baking powder, salt and flour together until mixed.
- Add the dry ingredients to the banana mixture and mix until just combined. Batter will not be smooth. Fold in chocolate chips and then spoon the batter into muffin tin.
- Bake the muffins for approximately 20 minutes or until a toothpick inserted into the center of a muffin tests clean. Let muffins cool for 4 minutes before serving.
