Banana and Chocolate Muffins

These moist muffins are a great comfort food and a perfect late night snack.


  • 4 large ripe bananas, mashed
  • 1/2 cup white sugar
  • 1 slightly beaten large egg
  • 1/3 cup melted butter
  • 3/4 cup chocolate chips
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1-1/2 cups flour


  1. Preheat the oven to 350 degrees and grease a muffin tin with butter or oil.
  2. In a large bowl, mix the banana, sugar, egg and butter together until blended.
  3. In a second bowl, whisk the baking soda, baking powder, salt and flour together until mixed.
  4. Add the dry ingredients to the banana mixture and mix until just combined. Batter will not be smooth. Fold in chocolate chips and then spoon the batter into muffin tin.
  5. Bake the muffins for approximately 20 minutes or until a toothpick inserted into the center of a muffin tests clean. Let muffins cool for 4 minutes before serving.
