- 1 medium eggplant, peeled and sliced
- 1/2 cup butter, melted
- 1 (5 ounce) can evaporated milk
- 1-1/2 cups cracker crumbs
- Preheat the oven to 350 degrees Fahrenheit. Grease a 2-quart baking dish.
- Boil the eggplant in a saucepan until it is easily mashed. Add the remaining ingredients and season with salt and pepper.
- Pour into the prepared pan and bake for 25 minutes.
