A easy mashed eggplant side dish.

Ingredients

  • 1 medium eggplant, peeled and sliced
  • 1/2 cup butter, melted
  • 1 (5 ounce) can evaporated milk
  • 1-1/2 cups cracker crumbs

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease a 2-quart baking dish.
  2. Boil the eggplant in a saucepan until it is easily mashed. Add the remaining ingredients and season with salt and pepper.
  3. Pour into the prepared pan and bake for 25 minutes.
