Southern baked chicken.
Ingredients
- 1 chicken, 3-4 pounds
- 2 teaspoons salt
- 1 teaspoon pepper
- 8 cups bread crumbs
- 1/2 cup butter, melted
- 1 cup celery, finely chopped
- 1/2 onion, sliced
- 1/2 cup parsley
- 3/4 cup olives
- 1/2 teaspoon sage
- 1 1/2 cups peach nectar
Directions
- Mix together 1 teaspoon salt and 1/2 teaspoon pepper and rub on the inside and outside of the chicken.
- Melt the butter, add in the bread crumbs and cook for 3-5 minutes. Mix in the celery, onion, parsley, olives, sage and the remaining salt and pepper. Cook until vegetables are tender. Mix in 1/2 cup peach nectar.
- Remove the mixture from the heat and stuff inside the hen. Sew up the end. Pour the remaining nectar over the chicken.
- Bake at 350 degrees Fahrenheit for 15 minutes, or until brown. Cover and bake for 2 1/2 hours. Baste as needed.
