Pork and beans never looked or tasted so chic. A great modern take on the traditional medley.

  • 1 1-3/4-pounds center-cut pork loin filet, cut crosswise into 8 pieces
  • 8 slices center-cut bacon
  • 4 green onions, chopped
  • 1 pint cherry or grape tomatoes, halved
  • 1 16-ounce can pinto beans, rinsed and drained
  • 1/3 cup ketchup
  • 2 tablespoons
  • 1 teaspoon yellow mustard
  • Sea salt and freshly ground pepper
  • Sea salt and freshly ground pepper

  1. Sprinkle the pork on both sides with salt and pepper and then wrap one slice of bacon around each piece. Secure with a toothpick and place the pork on a grill rack over a drip pan.
  2. Grill the pork, covered, for 25 minutes, turning once halfway through cooking.
  3. In the meantime, place the onions, tomatoes, beans, ketchup, water and mustard into a saucepan over high heat and bring to a boil. Once boiling reduce heat to medium-low and simmer mixture for 20 minutes.
  4. Spoon the beans over the grilled pork and serve immediately.
