A creamy, crunchy breakfast omelet.
- 2 eggs
- 5 strips bacon, fried, drained and crumbled
- 1/3 cup sour cream
- 3 green onions, chopped
- 1 tablespoon butter
- Use the bacon drippings to saute the onions. Beat the eggs with a tablespoon of water.
- In a separate bowl combine the bacon, onions and sour cream.
- Add the butter to an omelet pan. Once the butter has melted, pour the egg mixture in and heat until set. Spread the sour cream mixture down the center and fold onto a warm plate.
