Super easy and great for unexpected guests, Bacon Potato Frittata is made from ingredients you probably have on hand.


  • 1, 8 ounce package sliced bacon
  • 2 medium potatoes, sliced
  • 4 eggs
  • 2 green onions, chopped
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon oregano


  1. In 10 inch skillet over medium-low heat, cook bacon until browned; remove to paper towels to drain. Crumble bacon; set aside. Pour off all but 3 tablespoons bacon drippings for skillet.
  2. Over medium heat, heat drippings in skillet until hot. Add potatoes; cover skillet and cook potatoes until tender and lightly browned on both sides, turning potatoes occasionally, about 15 minutes.
  3. In small bowl with fork, beat eggs and remaining ingredients until blended. Pour egg mixture into skillet over potatoes; sprinkle with bacon; cook until eggs begin to set around edge. With spatula, gently lift edge as it sets tilting pan to allow uncooked portion to run under, shaking pan occasionally to keep egg mixture moving freely in pan. Reduce heat to low; cover and cook 10 minutes. Serve immediately.
