Bacon, egg and hominy scramble.


  • 4 slices of bacon
  • 1 (20 ounce) can hominy
  • 4 eggs
  • 1/2 teaspoon salt
  • dash of pepper


  1. Crisp the bacon and drain.
  2. Lightly brown the hominy in 2 tablespoons of the bacon dripping.
  3. Beat together the eggs, salt and pepper and mix in with the hominy. Heat until the eggs are set, stirring often.
  4. Season and serve with the bacon crumbled on top.
