Bacon, egg and hominy scramble.
Ingredients
- 4 slices of bacon
- 1 (20 ounce) can hominy
- 4 eggs
- 1/2 teaspoon salt
- dash of pepper
Directions
- Crisp the bacon and drain.
- Lightly brown the hominy in 2 tablespoons of the bacon dripping.
- Beat together the eggs, salt and pepper and mix in with the hominy. Heat until the eggs are set, stirring often.
- Season and serve with the bacon crumbled on top.
