No need to shred carrots, Baby Food Carrot Cake uses 2 small jars of baby food carrots. Frost the three layers with a generous slathering of Cream Cheese frosting.
Ingredients
- 2 cups sugar
- 1-1/2 cups oil
- 4 eggs
- 2 cups flour
- 2 teaspoons soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 small jars baby food carrots
Directions
- Beat sugar and oil together in bowl. Add eggs, beating well.
- Sift dry ingredients together. Fold into egg mixture alternately with carrots, blending well. Pour into 3 prepared layer pans.
- Bake at 300 degrees for 40 minutes. Frost with Cream Cheese icing, if desired.
