No need to shred carrots, Baby Food Carrot Cake uses 2 small jars of baby food carrots.  Frost the three layers with a generous slathering of Cream Cheese frosting.

Ingredients

  • 2 cups sugar
  • 1-1/2 cups oil
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 small jars baby food carrots

Directions

  1. Beat sugar and oil together in bowl. Add eggs, beating well.
  2. Sift dry ingredients together. Fold into egg mixture alternately with carrots, blending well. Pour into 3 prepared layer pans.
  3. Bake at 300 degrees for 40 minutes. Frost with Cream Cheese icing, if desired.
