Avocado Broccoli Salad is lightly dressed with a herbs and vinegar.
Ingredients
- 1, 10 ounce package broccoli, cooked and chilled
- 1 avocado, sliced
- 1/4 bunch watercress or mixed salad greens
- 2 tablespoon olive oil
- 1/8 teaspoon salt
- freshly ground pepper
- 1 tablespoon fresh tarragon
- 1 tablespoon chives, chopped
- 1 tablespoon vinegar
Directions
- Arrange broccoli and avocado on bed of watercress or salad greens. Drizzle over 1 tablespoon oil. Whisk salt, tarragon and pepper into vinegar; whisk in remaining oil. Drizzle over salad; turn vegetables carefully to prevent breaking. Scatter chives over top and serve immediately.
