Warm up with a bowl of Autumn Beef Soup after an day of raking leaves and carving pumpkins.
Ingredients
- 1 pound ground beef, lean
- 1 cup finely chopped onions
- 4 cups hot water
- 1 cup finely chopped celery
- 1 cup diced potato
- 1 cup finely shredded carrots
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 3 beef bouillon cubes
- 1/2 teaspoon dried basil
- 2 bay leaves
- 1 small can diced tomatoes
Directions
- Brown the ground beef and onions.
- Add the rest of the ingredients and simmer until the vegetables are tender---about 30 minutes.
- Add the tomatoes and cook for an additional 5 minutes.
