For a slightly lighter color and texture, use white wheat whole grain flour. It has the same nutritional benefits as whole wheat flour but is gives your soda bread a more buoyant consistency. 

Ingredients

  • 3-1/3 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 2 tablespoons wheat germ
  • 1 teaspoon sugar
  • 3 teaspoons rolled oats
  • 1 egg
  • 1/2 quart buttermilk
  • 2 tablespoons canola oil

Directions

  1. Preheat your oven to 375 degrees and lightly grease a baking sheet.
  2. Place the flour, baking soda, salt, wheat germ, sugar and oats into a large bowl and mix to combine. Make a well in the center of the dry ingredients and then add the egg, buttermilk and oil. Stir the mixture well until blended and then form into a ball.
  3. Place the ball of dough onto the prepared baking sheet, make a cross in the center of the bread and then bake for 45 minutes.
