Serve Asparagus A La King over chow mein noodles for an unexpected side dish.

Ingredients

  • 1 pound fresh asparagus, cut in 1 inch pieces
  • 4 hard cooked eggs
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • dash pepper
  • 1 teaspoon oregano
  • 2 cups Cheddar cheese, shredded
  • chow mein noodles

Directions

  1. Cook 1 inch asparagus pieces until just tender. Dice eggs. Melt butter, add flour, then milk and cook over low heat stirring constantly. Add remaining ingredients and stir until cheese melts. Add asparagus and eggs; blend well. Heat 5 minutes. Serve over chow mein noodles.
