Enjoy this flavorful chicken salad made with spinach, cucumber, onion and orange, and then tossed with a creamy sesame and ginger vinaigrette.


  • 1/2 cup plain soymilk
  • 1/4 cup vegetable oil
  • 1/4 cup toasted sesame oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons finely choppped fresh ginger
  • 2 tablespoons white miso
  • 1 tablespoon honey
  • 5 ounces baby spinach
  • 2 grilled chicken breasts, thinly sliced
  • segments of 2 oranges
  • 1/2 hothouse cucumber, thinly sliced
  • 1/2 red onion, thinly sliced


  1. Place the soymilk, vegetable oil, sesame oil, rice vinegar, fresh ginger, miso and honey into a blender and process until smooth.
  2. Put the spinach, chicken, oranges, cucumber and onion into a salad bowl and drizzle with the salad dressing. Toss to coat and serve immediately.
