Asian Beef and Rice is a great one dish meal.
- 2 tablespoons soy sauce
- 1 pound lean ground beef
- 1 clove garlic, minced
- 1 medium red pepper, seeded and chopped
- 1/4 teaspoon cayenne
- 1 cup brown rice
- 4 green onions, sliced
- 2 tablespoons fresh cilantro, chopped
- Combine 1 2/3 cups water and soy sauce. Heat large frying pan over high heat. Add beef and garlic; stir fry 5 minutes or until browned. Add bell pepper and cayenne; stir fry 1 minute longer. Mix in rice and soy sauce mixture. Bring to a boil.
- Reduce heat to low. Cover and simmer 50 minutes or until liquid is absorbed. Mix in green onions and cilantro. Remove from heat. Let stand covered 10 minutes before serving.
