This pesto differs from classic pesto with the addition of arugula instead of fresh basil. The green’s vibrant taste and peppery bite makes it a delicious sauce to toss with pasta.
- 1 6-ounce bag of arugula
- 1/3 cup asiago cheese (
- 1 garlic clove
- 1/4 cup olive oil + more if needed
- salt and pepper to taste
- 1/4 cup heavy cream
- Place the garlic, arugula and asiago cheese into a food processor and process until combined.
- With the food processor’s motor running, slowly pour the oil down the processor flute and mix until blended.
- Transfer the mixture to a bowl, season to taste with salt and pepper and then add the cream and stir to combine.
