Artichoke and Mushroom Salad is a wonderful, refreshing combination.

Ingredients

  • 2, 16 ounce cans artichoke hearts
  • 1/2 pound mushrooms, sliced
  • 1/4 cup pimentos, diced
  • 1 cup vegetable oil
  • 2/3 cups lemon juice
  • 1/3 cup red wine vinegar
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon dry mustard
  • 1 teaspoon salt

Directions

  1. Mix first three ingredients in large bowl. Mix remaining ingredients and pour dressing over mixture. Toss well to coat.
