A sweet and saucy chicken and rice dinner.


  • 1 cup apricot preserves
  • 1 ( 8 ounce) bottle Catalina salad dressing
  • 1 (1 ounce) packet onion soup mix
  • 6-8 boneless, skinless chicken breast halves
  • Rice, cooked


  1. Preheat the oven to 325 degrees Fahrenheit. Grease a baking dish.
  2. Mix together the preserves, dressing and soup mix in a bowl.
  3. Arrange the chicken in the prepared dish and spread the apricot mixture over. Bake for 1 hour and 20 minutes. Serve over rice.

You don't need sauce or liquid to roast a chieckn just roll foil into balls to keep it off the bottom of the pot. Put a whole cleaned chieckn on the foil, set it to low, and go about your day for the next 8 hours. It doesn't get crisp like in the oven but it's a really good chieckn.You can also cook a pork or beef roast in watered down BBQ sauce, then shred it and serve it on buns. Very tasty, and you can stretch it across 12 servings.
