Ingredients

  • 1-3/4 cups flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grated carrots
  • 1 cup applesauce
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/3 cup dried apricots, chopped

Directions

  1. Combine flour, sugar, baking powder, baking soda and salt; set aside.
  2. Mix together carrots, applesauce, egg and vegetable oil.
  3. Blend flour combination into egg mixture.
  4. Fold in apricots.
  5. Pour batter into a greased loaf pan.
  6. Bake at 350 degrees for 1 hour.
