Applesauce cake packed full of nuts and fruit.
Ingredients
- 2 cups flour
- 1 cup sugar
- 2 eggs
- 1 1/2 cups applesauce
- 1 teaspoon soda
- 1 teaspoon salt
- 1 cup raisins
- 1 cup dates
- 1 cup pecans, chopped
- 2 tablespoons blackberry jam
- 1 teaspoon cinnamon
- 1/2 teaspon nutmeg
- 1/2 cup shortening
- 1 teaspoon vanilla
Directions
- Sift together the flour, cinnamon, nutmeg and salt.
- Cream together the sugar and shortening in a separate bowl. Mix in the eggs.
- Combine the baking soda and applesauce and combine with the sugar mixture. Blend in the flour and remaining ingredients.
- Pour into a tube pan and bake at 350 degrees Fahrenheit for 1 hour.
