This easy-to-make spiced cake is ideal for serving at potlucks, large gatherings or summer picnics. Baked in advance, it will remain moist for up to 5 days.

Ingredients

  • 3 cups flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1/4 cup canola oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 eggs
  • 4 cups apples, peeled and finely chopped
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1 tablespoons brown sugar

Directions

  1. Cream butter, oil, sugar, eggs and vanilla.
  2. In a separate bowl, combine flour, 2 teaspoons cinnamon, baking soda and salt.
  3. Blend flour combination into egg mixture.
  4. Fold in apples and raisins.
  5. Pour batter into a greased 9 x 13-inch baking dish.
  6. Mix together remaining cinnamon and brown sugar, then sprinkle over top of cake.
  7. Bake at 350 degrees F for 1 hour.
