This easy-to-make spiced cake is ideal for serving at potlucks, large gatherings or summer picnics. Baked in advance, it will remain moist for up to 5 days.
Ingredients
- 3 cups flour
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1/4 cup canola oil
- 2 cups sugar
- 2 teaspoons vanilla
- 3 eggs
- 4 cups apples, peeled and finely chopped
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1 tablespoons brown sugar
Directions
- Cream butter, oil, sugar, eggs and vanilla.
- In a separate bowl, combine flour, 2 teaspoons cinnamon, baking soda and salt.
- Blend flour combination into egg mixture.
- Fold in apples and raisins.
- Pour batter into a greased 9 x 13-inch baking dish.
- Mix together remaining cinnamon and brown sugar, then sprinkle over top of cake.
- Bake at 350 degrees F for 1 hour.
