Apple Raisin Muffins are made with a great combo of fruits and flavors.
Ingredients
- 3/4 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups apples, peeled, cored and diced
- 1/2 cup raisins
- 1/2 cup walnuts, chopped
Directions
- In large bowl, beat oil and sugar for 2 minutes. Add eggs and vanilla, beat 1 minute. In another bowl, stir together flour, baking soda, cinnamon and salt. Add dry ingredients to oil mixture.
- Stir until just combined; then stir in apples, raisins and walnuts. Batter will be very thick.
- Line muffin cups with paper liners. Spoon batter in muffin cups. Bake at 400 degrees F for 20-25 minutes or until cake tester comes out clean.
- Remove from oven. Wait 5 minutes and place muffins on wire rack. Serve warm
