This sweet coffee cake makes a cozy afternoon snack, especially alongside a hot cup of coffee.
Ingredients
- 2 cups flour
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 eggs
- 1/2 cup butter
- 1 tablespoon grated lemon rind
- 1 teaspoon lemon juice
- 1 cup milk
- 1 apple, peeled and chopped
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Directions
- Combine 2 cups flour, baking powder and salt; set aside.
- Cream 1/2 cup sugar, eggs, 1/2 cup butter, lemon peel, lemon juice and milk.
- Blend flour combination into egg mixture.
- Fold in apples.
- Pour batter into a greased 8x8 baking dish.
- Mix together remaining flour, sugar, butter and cinnamon until mixture becomes coarse; sprinkle over top of cake batter.
- Bake at 425 degrees for 15-20 minutes.
