This soft bread makes a cozy afternoon snack, especially alongside a hot cup of coffee.

Ingredients

  • 2 cups shredded apples, peeled
  • 1/2 cup sugar
  • 1/2 cup powdered milk
  • 1 cup dried cranberries
  • 2 eggs
  • 1/2 cup applesauce
  • 2-1/2 cups flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt

Directions

  1. Combine apples and sugar; set aside.
  2. Combine flour, baking powder, baking soda, cinnamon, nutmeg and powdered milk.
  3. In a separate bowl, mix together cranberries, eggs, applesauce and apples.
  4. Blend flour combination into apple mixture.
  5. Pour batter into a greased loaf pan.
  6. Bake at 375 degrees for 45-50 minutes.
