Anna Banana Cake is a classic favorite with a bit of rum in the icing to spice things up.

Ingredients

  • 3 very ripe bananas
  • 1/2 stick margarine, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup walnuts, chopped
  • Icing: 1/2 stick margarine, softened
  • 2 cups confectioner's sugar
  • 5 tablespoons milk
  • 1 tablespoon rum

Directions

  1. Mash bananas and margarine together with a fork. Add sugar and mix together. Then add eggs, beat together with vanilla. Beat in dry ingredients until well blended. Add walnuts.
  2. Pour into a well greased 8 inch square baking pan. Bake at 350 degrees F for 30 minutes, until brown and tests done with toothpick inserted in the middle.
  3. Mix icing ingredients together. When cake is cooled spread on icing. Refrigerate cake until ready to serve.
