Anchovy Rolls are great with a glass of hearty dark beer.
Ingredients
- 4 eggs
- 7 tablespoons cream
- 1/2 teaspoon salt
- 2 large flour tortillas
- 1 tin anchovies
- 1/2 leek, shredded
- 1 small onion, finely chopped
Directions
- Beat the eggs, cream and salt together. Add a 1/2 teaspoon olive oil to a skillet and pour in the mixture. Heat gently, stirring constantly, until mixture becomes creamy and firm.
- Butter the tortillas. Spread the scrambled eggs, anchovies, leek and onion on it and roll up. Cut into 2 inch slices.
