Anchovy Rolls are great with a glass of hearty dark beer.

Ingredients

  • 4 eggs
  • 7 tablespoons cream
  • 1/2 teaspoon salt
  • 2 large flour tortillas
  • 1 tin anchovies
  • 1/2 leek, shredded
  • 1 small onion, finely chopped

Directions

  1. Beat the eggs, cream and salt together. Add a 1/2 teaspoon olive oil to a skillet and pour in the mixture. Heat gently, stirring constantly, until mixture becomes creamy and firm.
  2. Butter the tortillas. Spread the scrambled eggs, anchovies, leek and onion on it and roll up. Cut into 2 inch slices.
