Ambrosia Pancakes can be a lovely way to end a light lunch.

Ingredients

  • 1/2 cup favorite pancake mix
  • 1 1/4 cups milk
  • 1 egg
  • 2 tablespoons melted butter
  • 2 teaspoons almond extract
  • 2 teaspoons sugar
  • 1 cup flaked coconut
  • 1, 1 pound 4 ounce can pineapple chunks, drained

Directions

  1. In a large bowl, combine pancake mix, milk, egg, butter, extract, sugar, 2/3 cup coconut; beat until fairly smooth.
  2. Using a 1/4 cup measuring cup as a scoop, pour 1/4 cup batter onto hot, lightly greased griddle or skillet. Cook until top is covered with bubbles and edges look cooked. Turn with spatula and cook on underside till golden. Repeat, until about 8 pancakes are made. Keep then warm.
  3. Serve a pancake per person and pass pineapple chunks and 1/3 cup coconut as toppings.
