Almond Sweet Potato Balls are a unique side dish full of traditional flavors.
- 3 cups cooked sweet potatoes or 1, 23 ounce can
- 3 tablespoons butter
- 5 tablespoons orange marmalade
- 1 large egg
- 1/2 teaspoon salt
- 2/3 cup chopped almonds
- Mash potatoes and mix with butter, marmalade, egg and salt. Beat until smooth.
- Roll heaping tablespoons of potatoes in almonds. Place balls in greased baking dish. Bake at 400 degrees F for 15 minutes.
