An almond cookie with a wonderful spice taste.
Ingredients
- 1-3/4 cups almond flour
- 2/3 cups flax seed meal
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 cup grated coconut
- 1 cup almond pieces
- 1/2 cup butter
- 1 cup almond butter
- 2 cups granular Splenda
- 2 eggs
- 1/2 cup half and half
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Directions
- Preheat oven to 375 degrees F.
- Blend almond flour with flax meal, cinnamon, nutmeg, baking soda, baking powder, and salt.
- Put aside.
- Cream butter with almond butter and Splenda.
- Add eggs and cream, followed by extracts, and mix well.
- Mix in dry ingredients, coconut and chopped nuts.
- Place by teaspoonfuls onto a baking pan sprayed with non stick spray.
- Bake for about 10 minutes, until edges are lightly brown.
