Serve Almond Chicken with rice and green salad for a satisfying and colorful meal.

Ingredients

  • 1/2 cup blanched almonds
  • 2 tablespoon olive oil
  • 2 whole chicken breasts, skinned, boned and diced into 1 inch pieces
  • 1 egg white
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons dry sherry
  • 1 large carrot, pared and diced
  • 6 green onions, cut into 2 inch pieces
  • 3 stalks celery, cut into one inch pieces
  • 1/2 cup bamboo shoots, diced
  • 1 green pepper diced
  • 1 teaspoon fresh ginger, minced
  • 3 tablespoons olive oil
  • Sauce: 1/2 teaspoon sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 3/4 cup chicken broth

Directions

  1. Mix sauce ingredients and set aside.
  2. Prepare chicken and marinate in sherry, cornstarch, egg white and soy sauce for 20 minutes. Heat wok. Add 2 tablespoons oil and stir fry almonds briefly until golden. Drain on paper towels.
  3. Add 1 tablespoon oil and stir fry ginger. Add carrots and cook for 1 minute. Add remaining vegetables and cook until crisp tender, about 3 minutes. Remove.
  4. Add remaining oil and stir fry chicken just until done. Add vegetables and combine. Pour sauce into wok and cook until thickened. Finally add almonds. Toss and serve.
