Waldorf salad goes great with turkey. Stuff whole-wheat pita pockets with sliced turkey, lettuce and a generous scoop of Waldorf salad. For the salad, combine ½ cup each of quartered seedless grapes, finely-diced celery and apples with four tablespoons each of mayo and plain non-fat yogurt. Even kids who don't like salad will eat this up. If you're taking your picnic on the road, wrap the individual pockets in plastic wrap. Always keep food refrigerated until you're ready to eat.
Beautiful bagelsSmoked trout salad and a cream cheese bagel sandwich is a great combo. Be warned, though: there will be those who can't resist putting the salad in the bagel so they get all the wonderful flavors in every bite. If you have small children, use mini-bagels. Combine four ounces flaked smoked trout (or salmon) with ¼ cup diced celery, two tablespoons minced onion, one teaspoon dried dill, two tablespoons low-fat mayonnaise, two tablespoons sour cream, one tablespoon lemon juice, one teaspoon freshly grated lemon zest, and a grind or two of fresh ground pepper. Serve a scoop of salad on top of lettuce leaves with a tomato wedges on the side.
