Though it may sound expensive, hosting a wine and cheese night doesn't mean one person has to shoulder the cost. Have each person bring one cheese and one bottle of wine, and once everyone arrives, set up tasting stations featuring one wine and one cheese. Choose a theme and have each friend pick a dish within that theme (Mexican, Spanish, Vegetarian, etc.) to make at your place. Small dishes or one-bite items work best so no one gets too full too fast, and then each person gets a turn in the kitchen to make their dish.
