Taco Bus

Take a ride on the Taco Bus for some authentic, fresh and fast Mexican street food in Tampa, Florida. From tacos and burritos, to tortas (Mexican sandwiches) and tostadas, with one bite you'll think you hopped a plane and landed south of the border. While they also have a sit-down restaurant, we'll be hoping the mobile version pulls up somewhere near us this summer. Bonus: Taco Bus has a wide array of vegan and vegetarian offerings.

Fries & Dolls

This tasty truck in Calgary, Alberta (dubbed a "mobile snacking experience"), offers up everyone's favorite — French fries. But not just any French fries. The dolls in question know their product and serve fresh cut fries in some seriously creative ways. We dare you to resist the "Farrah," perfectly crispy potatoes topped with a savory blend of garlic, parsley and grated Parmesan cheese. Yum.

Brunch Box

Brunch Box in Portland, Oregon, is a burger-lovers dream. But don't expect your run-of-the-mill patties with a few fixings. Nope, this cart offers behemoth-sized sandwiches you'll need to bring your appetite for. Take the "OMG" for instance, a patty with American cheese, bacon, ham, Spam (yes, Spam), an egg and some standard burger toppings to finish it off. Talk about super-size, but also super-tasty.

Hot, delicious pizza baked in a truck? Sign us up! DC Slices bakes crispy thin crust pies while on the move in Washington, D.C., including plain cheese, pepperoni, Italian sausage and onion, veggie (green peppers, onion, mushrooms, black olives), Hawaiian and Buffalo chicken.

The truck alone (shaped like a giant silver pig) is reason enough to check out this mobile sandwich shop in Seattle, Washington, but why not stay for the flavorful food? Pulled pork, grilled chicken, vegetable and pork and posole sandwiches make up the bulk of the menu, but don't skip the tangy slaw or creamy macaroni and cheese.

Food trucks often serve up simple fare like burgers, hot dogs and tacos, but this one (self-described as San Francisco's only mobile bistro), is serving up French cuisine. Enjoy cauliflower bisque, escargot, braised lamb, fois gras and sauteed shrimp all from a roving gourmet food cart.

Food trucks seem to be popping up everywhere nowadays, and the offerings of these mobile restaurants keep getting fancier and fancier. The list of delectable food truck dishes in this article doesn’t surprise me, as food trucks seem to be continually evolving and defying assumptions by offering meals one would expect to find in a brick and mortar sit-down restaurant.

I haven't eaten from a food truck yet, but they seem to be super trendy these days and now I really want to.
