Red and green foods add a festive element to your holiday table. There's no need for food colorings when you use garden-fresh vegetables with natural colors of the season. Colorful Christmas vegetable dishes will please the eye and the taste buds.

Here are a couple appetizer ideas using red and green veggies:

  • Bell pepper soup is a quick creamy vegetable soup. After blending the majority of the soup, add diced green and red peppers to add bits of confetti-like color in the dish. Top with yogurt or sour cream for a splash of white.

  • Salad is a smart side dish for any special meal. Red and green salad uses corn, peas, kidney beans, red onions, celery and radishes in a creamy white dressing. The colorful vegetables have a crisp texture with a little heat due to the onions and radishes.

  • Green bean and red pepper rollups are a fun, festive appetizer for Christmas parties.  Instead of white bread, try tortillas, especially green spinach tortillas or red tomato tortillas.


Try using other red and green vegetables to add some color to your holiday meal. Radishes, beets, spinach, peas, peppers and green beans are all bright, festive veggie choices.
