On Mother’s Day, Mom deserves to savor a delicious dessert made by someone else for a change. These three no-bake options are easy, fun, delicious, and easy enough for the kids to help prepare.
Raspberry Almond Fool
Serves 4
Ingredients
10-ounces frozen raspberries
1/2 cup confectioners' sugar
1 1/4 cup nonfat yogurt (use a good quality yogurt, it's worth it)
1/2 teaspoon almond extract
2 egg whites
2 tablespoons sliced almonds
Directions
Put the raspberries and confectioners' sugar in a food processor or blender and blend until smooth, about 30 seconds.
In a medium mixing bowl, stir the raspberry mixture, yogurt, and almond extract.
In a separate bowl, whisk egg whites until they form stiff peaks (using a stand mixer or handheld speeds this process up).
Fold egg whites into the raspberry/yogurt mixture; stir until smooth (a wire whisk can help).
Spoon into serving glasses and chill for at least 1 hour. Sprinkle with sliced almonds just before serving.

Combine all ingredients in a blender and process until batter is very smooth, scraping down the sides of the bowl, if necessary; cover and let batter cool in refrigerator for 1 hour.
Preheat a nonstick skillet over medium heat; pour 1/4 cup to 1/3 cup of the batter into the hot pan.
Cook until golden brown on each side; repeat until all the batter has been cooked.
To serve: Spread half of each crepe with Nutella; top with sliced bananas and a sprinkle of chopped walnuts; fold into quarters and serve immediately.
Spray sides and bottom of 9 x 13-inch glass pan with cooking oil.
In a heavy pot, melt the butter over medium-low heat; add the marshmallows and stir until completely melted; add a pinch of salt and stir a little more; add cereal and stir to coat.
Pour the cereal mixture into the prepared pan and press down (wet hands work best for this); sprinkle with chocolate chips and press down again; let cool; cut into 20 squares (4 rows by 5 rows).
