Vanilla Almond Granola with Citrus Cheese
Serves 8
Nothing says "brunch" like a homemade nutty granola served with thick, rich yogurt cheese and vibrant juicy slices of orange and grapefruit. To make yogurt cheese, you need to start this recipe a day ahead. You can also make the granola up to two days ahead to save yourself time on Mother's Day.
Ingredients:
2 quarts whole-milk yogurt (without gelatin or fillers)
4 cups quick-cooking rolled oats
1 cup natural wheat bran
1-1/2 cups whole almonds
1/2 cup agave nectar or honey
2 teaspoons pure vanilla extract
3 oranges, peeled, diced
2 ruby red grapefruit, peeled, diced
Directions:
1. To make yogurt cheese, line a large colander with cheesecloth and place colander over a large bowl. Pour yogurt into colander and place in refrigerator overnight to allow the liquid/whey to drain into bowl. The more liquid that drains, the thicker the yogurt cheese.
2. To make granola, preheat oven to 325 degrees F and place oats, wheat bran and almonds in a large bowl, tossing to combine. In a small saucepan over low heat, warm agave or honey and vanilla, stirring occasionally.
3. Pour agave mixture over oat mixture and toss to coat. Spread on a baking sheet in one layer and bake for 20 minutes, stirring occasionally. Granola is done when it is fragrant and lightly toasted. Remove and set aside to cool.
4. Toss oranges and grapefruit together. To serve, place 1/2 cup of yogurt cheese in a bowl. Place 1/2 cup of diced citrus along one side and sprinkle 1/2 cup of granola on top.
Note: For the younger tykes, stir applesauce or another fruit puree into yogurt cheese for a creamy brunch treat.
Mother's Day Bellini
Serves 6 to 8
This Mother's Day Bellini is a fruity effervescent drink with many variations. Use the sweetest fruit in season and a good bottle of champagne or sparkling wine. Sip away as you whet your appetite for a mouthwatering Mother's Day brunch feast.
Ingredients:
3/4 cup pureed ripe fruit (try berries or apricots)
1 bottle of champagne or sparkling white wine
Fruit for garnish
Directions:
For each serving, place 2 tablespoons fruit puree in the bottom of a champagne flute. Top with champagne or sparkling wine and garnish with fruit.
