Rich, flavorful Father's Day fare
Grilled New Potatoes
Makes 4 servings
Ingredients:
2 pounds new red potatoes
1/4 cup butter, melted
2 cloves garlic, crushed
1 tablespoon seasoned salt
Directions:
- Preheat grill to medium heat. Place potatoes in a foil pan or on heavy-duty aluminum foil. Mix together butter, garlic, and salt and pour over potatoes. Cover pan with foil or form a packet with foil.
- Place potatoes on grill and cook 50 to 60 minutes or until potatoes are form tender. Potatoes can also be baked in a 400 degree F. oven for 50 to 60 minutes.
The Ultimate Burger
Makes 4 servings
Ingredients:
1 1/2 pounds ground sirloin
Sea salt, to taste
Ground pepper, to taste
1 sprig fresh rosemary, only leaves
1/4 cup extra-virgin olive oil
2 large Vidalia or WallaWalla onions, cut into thick slices
1/3 pound Jarlsberg or Jarlsberg lite cheese slices
2 large vine-ripened tomatoes, cut into thick slices
4 large lettuce leaves
Tangy barbeque sauce
4 whole grain hamburger buns
Directions:
- Preheat grill to medium heat. Form meat into 4 patties and sprinkle with salt and pepper. Combine rosemary leaves with oil and brush onto onions. Sprinkle with salt and pepper.
- Grill onions 2 minutes per side until they are tender and golden. Grill meat 4 to 6 minutes per side or until preferred degree of doneness. When they are almost done, place cheese slices on top and let melt.
- Coat rolls with the rest of the rosemary oil and grill until toasted. Place burgers on buns, top with barbecue sauce, onion slices, lettuce, and tomato.
Grilled Herbed Vegetables
Makes 4 servings
Ingredients:
1 tablespoon olive oil
1 clove garlic, minced
2 teaspoons snipped fresh rosemary or 2 tablespoon snipped Fresh basil leaves
1/4 teaspoon salt
4 cups mixed vegetables, such as eggplant, summer squash or zucchini, green beans, red onion, and red, green, or yellow sweet peppers
Directions:
- Preheat grill to medium heat. Combine oil with garlic, rosemary, and salt. Toss vegetables with oil.
- Transfer vegetables to a large piece of aluminum foil and seal to form a packet, leaving a part open to steam. Grill vegetables for 20 minutes or until fork tender. Alternatively, packets can also be baked in a 350 degree F. oven for 25 minutes.
Barbecued S'mores Wraps
Makes 4 servings
Ingredients:
4 large flour tortillas
1 cup milk chocolate chips
2 cups miniature marshmallows
Fillings:
Pie filling (any flavor)
Butterscotch chips
Peanut butter chips
White chocolate chips
Caramel sauce
Hot fudge
Candied fruit
Directions:
- Preheat grill to medium heat. Place each tortilla on a large piece of aluminum foil. Top each tortilla with chocolate chips, marshmallows, and fillings of your choice.
- Roll tortillas like a burrito and wrap in foil. Grill for 3 to 5 minutes, turning to heat all sides and evenly melt ingredients.
